I still use and love my Bold 9700 (tmobile), but having an Iphone too (for web browsing and media) is great. Here's my list, which requires jailbreaking:

activator -- a bunch of stuff requires this.
multifl0w -- i love this switcher. It's not free, but it's amazing.
remove background (when combined w/ activator), -- you can just do one action (hold button) and remove all background apps
Veency + mousesupport -- if you want to VNC to your phone to send or check SMS, while it's in your pocket/bag/desk.
AptBackup
DataUsage (if you are one of those people who had work buy an iPhone after the 2GB/month cap)
FastCopy -- love this (removes delay when you highlight text)
iSHSHit

I used to have many networking and system tools, but I realized that I never used most of them (irssi, tcpdump, zsh ;)) and it ended up causing many apps to crash.

Good list, I've been meaning to type mine up - but you MUST try FolderEnhancer. Nested folders in Folders and WAY faster than the native UI. I like a single screen layout so this is a must have for me. JailBreak required of course.
